ALERT: TOP TEN ENTRIES FOR RIBS, TURKEY NATIONWIDE. Fat Racks was our 240th ‘cue stop in a long running trip now spanning 28 states. $26.52 purchased a combo platter of brisket and turkey with sides of pinto beans (the only house made side) and coleslaw, and two bottled soft drinks. The turkey is exceptional– easily one of the country’s best with its moist, beautifully smoked and lightly seasoned flavor profile. The fatty end of the brisket was equally moist, but curiously, the bark had been trimmed off. We asked for and received a serving, which turned out to be authentic and absolutely sensational burnt ends! For some reason, the trim is not popular is this region, so if you are a fan of true Texas burnt ends, request it and see what happens.
The pinto beans were classic west Texas, and the ribs (Michael generously gifted us with a couple to sample) easily qualify for top ten status nationwide– and this is a very, very competitive category.
With a pair of nationwide top ten items on the menu, and a classic Texas side, you should consider Fat Racks a “must do” destination in this region.
